I Love Oatmeal. I don’t know where this fascination has come from, or where it will lead. I do however know that ever since my sister in law gave me a can of steel cut oats my life has been forever changed. I followed the instructions on the can one time, and although I do feel the texture and delight of hand stirred goodness was worth while, I looked to a less hands-on approach as I was sick with a cold this week. Then lo, the rice cooker! I put in the 1/4 cup of oats into the cooker, added 3/4 cup of almond milk in to follow and let it go! I watched a bit of Gentlemen Prefer Blondes, and before the plot could thicken my oats had! I sliced some strawberries on top and added a bit of honey. I really didn’t mind much that it had boiled over a tad, or that the bottom of my oats had a little crispness to them, I just stirred that in and went on my merry way to the couch. As far as days with colds go, I say it was twice the win. I escaped an absurdly long meeting at work, and I got to watch some classics from beneath my down blanket eating my delicious oats. Warm, comforting and satisfying. What is your sick-day routine?
