So I tried to make paleo pancakes I found on Pinterest. They are pretty fantastic, but take some practice on technique. You can see the recipe I used here. I added a couple spoonfuls of flax-chia-coconut mix in as well just for fun. I recommend setting the stove on low, as they tend to cook on the outside disproportionately faster than the inside. As you can tell from the last picture, the first three pancakes didn’t look so hot, but I got the hang of it after a while, and they still tasted wonderful! I froze these and am glad to say they taste delightful reheated so you only need to make them once for a long time. It made about 12 pancakes. I get full on two. Enjoy!
