After a long weekend, the last thing I want to do is spend a long time on dinner. Happily for me, I have made grilled chicken breast strips in advance and have them ready to go from the fridge (or freezer)
Here is my super fast quesadilla recipe:
Tortillas- one for each
Shredded Cheddar Cheese (1/4-1/2) cup depending on how cheesy and how big your tortilla is
Chicken (grilled or shredded) I’ve used both and they work swell.
Salsa-(mine is homemade)
Equipment: I used a George Foreman grill, you can use a microwave or stove-top as well.
1- Lay out your tortillas on a plate.
2- Pre-heat the george foreman or skillet.
3- Dump an appropriate amount of cheddar cheese on one half of the tortilla.
3- Lay the chicken pieces on top of the cheese, add toppings such as onion, bacon bits, bell peppers or anything you’d like.
4- fold the tortilla over on itself over the ingredients, lift and set in the George Foreman, with the curve at the top so your cheese doesn’t fall out.
5. After all the ingredients are melted and your tortilla is toasty, pull it off the grill and onto your plate. You can slice it up in wedges for easy dipping in your salsa.
